Nobiletin and Tangeretin facilitate interfacial migration and inhibit lipid digestion through their binding interactions with bile salts

摘要: The interfacial migration of bioactive molecules modulates the properties of the oil-water interface, effectively retarding lipid digestion. The polymethoxyflavones, such as Nobiletin (NBT) and Tangeretin (TAN), abundant in Citri reticulatae pericarpium, exhibit interfacial activity and inhibit lipolysis. This study used fourier transform infrared spectroscopy, molecular dynamics simulation, rheological analysis, and FFA release kinetics measurement to elucidate its mechanism of action. The results indicate that interfacial migration shows markedly superior inhibitory efficacy to lipase inhibition for interfacially active flavour molecules (p < 0.05). Ultraviolet-visible analysis revealed that bile salts (BS) significantly enhanced spice molecule migration (NBT: 6.80-fold, TAN: 12.31-fold), potentially disrupting BS interface stability through binding and interfacial migration. These findings show how spice molecules migrating to the interface inhibit lipid digestion, highlighting their potential as natural agents for weight management. The research results provide a theoretical basis for the development of healthy food.
