Tracking food-nutrition-carbon footprint evolutions and driving forces of China's megacity: insights from dietary transitions in Chengdu

摘要: With large-scale population aggregation, rising affluence, and changing food environments, megacities have become focal points of food consumption and associated climate impacts. This study examined the dietary transition process in Chengdu, a major megacity of China, and evaluated associated carbon footprint impacts. In addition, the driving forces during different dietary transition phases were analyzed using Logarithmic Mean Divisia Index (LMDI) model. Results show that Chengdu's dietary transition was characterized by the phased, diversified and persistent substitutions of foods rich in carbohydrate with those rich in fat and protein. Consequently, the per capita diet-linked carbon footprints increased by 35.73%, and total carbon footprints of Chengdu increased by 2.84 times. The calorie supply intensity, industrial structure and carbon intensity conjointly reduced the footprints by 48.68 Mt CO2e, while the per capita GDP, dietary structure and population drove the footprints up by 62.13 Mt CO2e, substantially offsetting the gains made by the mitigating factors. Driving factors contributed differently across distinct dietary transition phases. Per capita GDP was the dominant driver of increasing carbon footprints, but its effects weakened in the last phase. Calorie supply intensity played a key role in reducing carbon footprints during the first three phases, while industrial structure became the leading contributor to reductions since 2013. Notably, carbon intensity had limited effects to decline the footprints, underscoring the necessity of tackling non-energy-related emission sources. Chengdu's dietary transition serves as a forward-looking case for other developing cities in China.
